This no-fuss pizza is so easy to assemble and bursting with fresh flavours, it will soon be added to your summer favourites list.

Ingredients

Extra light sour cream

cup(s)

Flour tortilla(s)

160 g, (4 x 40g tortilla)

Smoked salmon

200 g, coarsely torn

Lebanese cucumber

2 medium, thinly sliced

Red onion

½ medium, thinly sliced

Rocket

2 cup(s), (60g)

Capers, rinsed, drained

1 tbs

Oil spray

1½ x 3 second spray(s)

Instructions

  1. Heat a large non-stick frying pan over medium-high heat. Lightly spray 1 tortilla on both sides with oil. Cook for 1–2 minutes each side or until golden. Transfer to a serving plate. Repeat with remaining tortillas.
  2. Spread tortillas with half the sour cream. Top with cucumber, salmon, onion, rocket and capers. Serve with remaining sour cream.
