Smoked salmon, herb ricotta and spinach pizza

Ingredients
Wholemeal pita bread
31 g
Low-fat ricotta cheese
2 tbs
Fresh lemon rind
1 tsp, finely grated
Fresh chives
2 tsp, chopped
Fresh dill
3 tsp, chopped
Baby spinach
10 g
Smoked salmon
50 g, sliced
Red onion
20 g, (1 tbs), thinly sliced
Olive oil
1 tsp
Lemon juice
1 tsp
Oil spray
1 x 3 second spray(s)

Preheat a chargrill or barbecue over high heat. Lightly spray wholemeal pita pocket with oil. Cook for 2–3 minutes each side or until golden and crisp.

Meanwhile, combine ricotta, lemon zest, chives and 2 tsp dill in a small bowl. Spread ricotta mixture over pita. Top with spinach leaves, smoked salmon and red onion.

Combine oil, lemon juice and 1 tsp dill in a bowl. Drizzle pizza with dill dressing to serve.
