Smoked salmon, cottage cheese and rocket rolls

97% fat-free cottage cheese
Fresh lemon rind
- Combine the cottage cheese with the rind in a medium bowl. Season with salt and pepper.
- Place the smoked salmon on a clean board. Arrange the rocket (trimming the ends so it pokes out from only 1 side) and 2 teaspoons of cheese mixture over each slice of salmon. Roll to enclose filling. Arrange on a serving plate.
TIP: You can make this up to 4 hours ahead of time and store in the fridge.
