Smoked salmon and rocket finger sandwiches

Thin slices of tender smoked salmon sandwiched with creamy dill spread and crisp rocket between soft wholemeal bread. These little fingers make a delicate snack

Ingredients

Extra light sour cream

cup(s), (80g)

Lemon juice

1 tbs

Fresh dill

2 tbs, finely chopped

Red onion

40 g, (2 tbs) finely chopped

Wholemeal bread

200 g, (8 x 35g)

Smoked salmon

100 g

Rocket

25 g

Instructions

  1. Combine sour cream, lemon juice, chopped fresh dill and red onion in a medium bowl, then season well with salt and freshly ground black pepper.
  2. Spread sour cream mixture onto four slices of fresh, wholemeal bread. Top with smoked salmon and rocket, then sandwich with remaining bread. Remove crusts, cut each sandwich into three fingers and serve immediately.
