Smoked salmon and coleslaw on rye
Ready in only 5 minutes, this filling sandwich can be easily prepped at work. Enjoy!
Light rye bread
8 slice(s), toasted
Coleslaw mix, without dressing
500 g, (1 cup)
99% fat-free plain Greek yoghurt
Pickled gherkin, drained
4 individual, (dill), thinly sliced
- Combine the mustard and yoghurt in a medium bowl. Add the coleslaw mix and toss to combine.
- Top one piece of toast with one quarter of the coleslaw mixture, salmon and gherkin. Top with another piece of toast to serve. Repeat with the remaining ingredients to make 4 sandwiches.
