This fresh fusion of green goodness is fast to make and perfect to pair with toast and poached eggs for a tasty café-style breakfast.

Ingredients

Frozen broad beans

2 cup(s), (300g)

Frozen green peas

2 cup(s), (240g) baby variety

Reduced fat feta cheese

40 g, crumbled

Fresh dill

1 tbs, chopped

Fresh mint

1 tbs, chopped

Fresh lemon rind

1 tsp, thin strips, to serve

Instructions

  1. Cook broad beans and peas separately following packet instructions. Drain.
  2. Combine beans and peas in a large bowl, smash with a potato masher until coarsely mashed. Stir through feta, dill and mint. Season well with salt and pepper. Serve sprinkled with lemon rind.

Notes

Use a zester tool to shave thin strips of rind from lemon. If you don’t have one, use a fine grater to finely grate rind instead.
