Smashed greens with crumbled feta makes a tasty side dish.

Ingredients

Frozen broad beans

300 g, (2 cups)

Frozen green peas

2 cup(s), (240g) baby variety

Reduced fat feta cheese

40 g

Fresh dill

1 tbs

Fresh mint

1 tbs

Fresh lemon rind

1 tsp, finely grated

Instructions

  1. Steam and peel frozen broad beans. Combine in a bowl with steamed frozen baby peas. Smash peas and beans with a masher or stick mixer until coarsely mashed. Stir through crumbled feta, dill and mint. Finely grate over some lemon rind and season well with salt and pepper.
