Slow cooked beef with ginger and star anise
Lean beef blade roast
630 g, (Buy 1 x 700g piece), fat trimmed
Fresh mixed vegetables
400 g, chopped (see tip)
1 tbs, (3cm piece) thinly sliced
Reduced salt soy sauce
1 x 3 second spray(s)
- Lightly spray a large non-stick frying pan with oil and heat over high heat. Cook beef, in batches for 2 minutes each side or until browned. Transfer to a 4.5 litre (18-cup) slow cooker.
- Add vegie mix, ginger, star anise, soy sauce, sugar and 1 cup (250ml) water. Cook, covered, on high for 4 hours (or low for 8 hours) or until beef is very tender.
- Remove beef from cooking liquid. Using 2 forks, coarsely shred beef and return to sauce.
