Ingredients

Beef, blade roast, raw

630 g, (Buy 1 x 700g piece), fat trimmed

Vegetable mix, non-starchy, fresh

400 g, chopped (see tip)

Fresh ginger

1 tbs, (3cm piece) thinly sliced

Star anise

2 individual

Reduced salt soy sauce

2 tbs

Brown sugar

2 tsp

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a large non-stick frying pan with oil and heat over high heat. Cook beef, in batches for 2 minutes each side or until browned. Transfer to a 4.5 litre (18-cup) slow cooker.
  2. Add vegie mix, ginger, star anise, soy sauce, sugar and 1 cup (250ml) water. Cook, covered, on high for 4 hours (or low for 8 hours) or until beef is very tender.
  3. Remove beef from cooking liquid. Using 2 forks, coarsely shred beef and return to sauce.

Notes

SERVING SUGGESTION: Serve with steamed bok choy and quinoa.
