Skinless chicken breast
600 g, (4 x 150g)
Moroccan seasoning
1 tbs
Fresh lemon rind
1 tsp, finely grated
Lemon juice
2 tbs
Olive oil
2 tsp
Lebanese cucumber
1 medium, halved, deseeded, thickly sliced
Tomato(es)
325 g, roughly chopped
Red radish
200 g, thinly sliced
Watermelon
200 g, chopped
Fresh flat-leaf parsley
¼ cup(s), chopped
Fresh dill
2 tbs, chopped
Olive oil
1 tbs
Fresh lemon rind
1 tsp, finely grated
Lemon juice
2 tbs
Wholemeal pita bread
120 g, (2 x 60g breads), toasted
Instructions
1
To make marinade, mix all marinade ingredients in a small bowl until combined. Brush evenly over chicken and set aside in fridge to marinate for at least 15 minutes.
2
Meanwhile, to make fattoush salad, toss cucumber, tomatoes, radishes, watermelon and herbs in a large bowl to combine. Whisk oil with lemon zest and juice in a small jug, season with salt and pepper, then drizzle over salad and set aside.
3
Heat a large non-stick grill pan over medium heat. Cook chicken for 5–8 minutes each side, until lightly charred and cooked through. Remove from pan and rest for 5 minutes before cutting into thin slices.
4
Tear pitas into bite-sized pieces and toss through salad. Serve chicken with salad.
