Sesame chilli prawn stir-fry

This spicy prawn stir-fry makes a healthier alternative to a Thai takeaway.

Ingredients

Sesame seeds

1 tbs

Sesame oil

2 tsp

Raw peeled prawns

500 g, tails intact

Asparagus

1 bunch(es), cut into 4cm lengths

Red capsicum

1 medium, thinly sliced

Soy sauce

2 tbs

Sweet chilli sauce

¼ cup(s), (60ml)

Bok choy

1 baby, trimmed, leaves separated

Cooked white rice

2 cup(s), (340g) to serve

Instructions

  1. Heat a wok over medium heat. Add sesame seeds and stir-fry for 2–3 minutes or until toasted. Transfer to a bowl to cool.
  2. Reheat wok over high heat. Add oil and heat for 30 seconds. Stir-fry prawns for 5–7 minutes or until just changed colour.
  3. Add asparagus, capsicums and ¼ cup (60ml) cold water. Stir-fry for 5 minutes or until tender. Add soy and chilli sauces and bok choy. Stir-fry for 2 minutes or until bok choy has wilted. Serve stir-fry with rice and sprinkle with toasted sesame seeds.
