For authentic soul food, this classic Creole dish from America’s deep south will jazz up your table.

Ingredients

Olive oil

1 tbs

Brown onion

1 medium, finely chopped

Celery

2 stick(s), thinly sliced

Red capsicum

1 medium, chopped

Garlic

2 clove(s), crushed

Pepper

1 tsp, cayenne

Plain flour

2 tbs

Chicken stock

2 cup(s), (500ml)

Canned diced tomatoes

400 g

Okra

200 g

Dried thyme

1 tsp

Seafood marinara mix

500 g

Canned butter beans, rinsed and drained

1 400g can

Fresh flat-leaf parsley

2 tbs

Instructions

  1. Heat oil in a large saucepan over medium-low heat. Cook onion, celery and capsicum, stirring occasionally, for 12–15 minutes or until very soft and golden. Add garlic and cayenne pepper and cook, stirring, for 30 seconds.
  2. Add flour and cook, stirring, for 1 minute. Gradually stir in stock. Add tomatoes, okra and thyme and bring to the boil. Reduce heat and simmer, covered, for 15 minutes.
  3. Add seafood and beans and cook, covered, for 3–4 minutes or until seafood is just cooked through. Sprinkle with parsley and serve with lemon wedges.

Notes

SERVING SUGGESTION: Brown rice. TIPS: You can use peeled prawns or skinless firm white fish fillets (chopped) instead of marinara mix. If okra is unavailable you can use 2 small zucchini (chopped).
