Scallops with mango salsa

red capsicum¼ small, finely chopped (2 tbs)
mango½ medium, peeled, finely chopped
fresh coriander1 tbs, finely chopped
fresh chives1 tbs, finely chopped
Scallop12 individual, without roe
olive oil1 tsp
lime juice1 tbs
- Combine capsicum, mango, coriander and chives in a small bowl. Divide mixture among 12 Chinese soup spoons.
- Gently toss scallops with oil. Heat chargrill over high heat. Add scallops and cook for 1 minute on each side or until cooked and golden. Sprinkle with lime juice. Place scallops on top of salsa in spoons. Serve.
