Ingredients
  • red capsicum
    ¼ small, finely chopped (2 tbs)
  • mango
    ½ medium, peeled, finely chopped
  • fresh coriander
    1 tbs, finely chopped
  • fresh chives
    1 tbs, finely chopped
  • Scallop
    12 individual, without roe
  • olive oil
    1 tsp
  • lime juice
    1 tbs
Instructions
  1. Combine capsicum, mango, coriander and chives in a small bowl. Divide mixture among 12 Chinese soup spoons.
  2. Gently toss scallops with oil. Heat chargrill over high heat. Add scallops and cook for 1 minute on each side or until cooked and golden. Sprinkle with lime juice. Place scallops on top of salsa in spoons. Serve.
