White self-raising flour
1 individual, thinly sliced
¼ cup(s), (40g), diced
Baby spinach leaves
¼ cup(s), (5g)
Reduced fat feta cheese
10 g, crumbled
- Combine egg and flour in small bowl. Season with salt and pepper and whisk with a fork to form a smooth batter. Stir in shallots, pumpkin, spinach and feta.
- Spoon mixture into a 200ml-capacity microwave-safe mug. Microwave on High (100%) for 2 minutes or until set. Stand 2 minutes before serving.
