Ingredients

Carrot(s)

1 medium, grated

Mushrooms

3 whole, finely chopped

Red capsicum

¼ medium, finely chopped

Onion

medium, finely diced

97% fat-free cottage cheese

2 tbs

Egg(s)

2 medium, lightly beaten

White self-raising flour

2 tbs

97% fat-free deli sliced ham

50 g, chopped

Dried herbs

½ tsp, Italian variety

Instructions

  1. Combine all ingredients in a large bowl and season with salt and pepper. Spoon mixture into a 20cm x 10cm silicone loaf tin or use the WW silicone loaf tin. Smooth the top.
  2. Microwave on High (100%) for 7 minutes or until set. Stand in tin for 5 minutes before turning out onto a chopping board. Cut into 8 slices to serve.

Notes

The WW Loaf tin is available for purchase at the WW Online Shop (ww.com/au/shop). Cooking time may vary depending on the wattage of your microwave. Loaf is ready when the tip of a sharp knife inserted in centre comes out clean. Loaf will keep for up to 5 days in a container in the fridge. Reheat individual slices in the microwave or serve chilled.
