Ingredients

Dry rolled oats

2 cup(s), (180g)

Baking powder

2 tsp

Egg(s)

3 medium

97% fat-free cottage cheese

1 cup(s), (250g)

Fresh chives

2 tbs, chopped

Green shallot(s)

2 individual, finely chopped

Shortcut bacon

50 g, finely chopped

Reduced-fat mozzarella cheese

2 tbs, grated

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 180°C. Lightly spray a 12-hole (⅓ cup capacity) muffin tray with oil.
  2. Place oats and baking powder in a large bowl, stir to combine. Season with salt and pepper. Add eggs, cottage cheese, chives, ¾ of the shallots and ¾ of the bacon and stir until just combined.
  3. Spoon mixture evenly into prepared tin. Sprinkle with remaining shallots, bacon and mozzarella, lightly pressing into top of muffins. Bake for 20 minutes or until golden.
