Ingredients

olive oil

3 tsp

garlic

3 clove(s), finely chopped

tomato(es)

2 medium, green variety, quartered

white onion

½ small, chopped, plus extra to serve

fresh green chilli

2 whole, long, chopped

jalapenos

1 individual, small, fresh, deseeded, chopped

fresh coriander

cup(s), leaves, plus extra to serve

lime juice

1 tsp, plus extra to serve

caster sugar

½ tsp

Instructions

  1. Heat oil in a small non-stick frying pan over medium heat. Cook whole garlic cloves, stirring, for 3 minutes or until golden. Transfer garlic and oil to a small bowl to cool.
  2. Place oil, garlic, chopped garlic, tomato, onion, green chilli, jalapeno, coriander, lime juice and sugar in a food processor. Using pulse button, process until chunky. Season with salt and extra lime juice to taste. Serve.
