Ingredients

orange rind

1 tsp, finely grated

vermouth

2 tsp

wholegrain mustard

1 tsp

skinless salmon fillet(s)

140 g, (1x140g)

fennel bulb(s)

1 baby, cut into 1cm pieces

orange juice

¼ cup(s), (60ml)

garlic

1 clove(s), crushed

fresh thyme

1 tsp, leaves

lentils, canned, rinsed, drained

Instructions

  1. Combine rind, vermouth and mustard in a small shallow dish. Season with salt and pepper. Add salmon and turn to coat.
  2. Remove plates from the WW Steamer. Place fennel in steamer with juice, garlic and thyme. Season with salt and pepper. Toss to combine. Close steamer and microwave on High (100%) for 5minutes.
  3. Stir lentils into fennel mixture. Place silicone board with handles on top of fennel mixture and place salmon and marinade on board. Close steamer and microwave on High (100%) for 3½ minutes or until cooked to your liking (a thin fillet may take less time). Serve fennel mixture topped with salmon.

Notes

TIPS: The WW Steamer is available for purchase at the WW Online Shop (ww.com/au/shop). If using the oven instead of the microwave. Preheat oven to 180˚C and bake for 15 minutes in step 2 and for 10minutes in step 3.
