Rockmelon, grape and passionfruit salad
Try this refreshing fruit combination for a filling and re-energising snack.
Rockmelon or cantaloupe
¼ cup(s), peeled, cut into thirds
½ cup(s), (halved)
2 medium, pulp
- Preheat oven to 200°C or 180°C fan-forced. Spread almonds on a baking tray and bake for 3–4 minutes or until toasted.
- Place rockmelon in a serving bowl and top with grapes and passionfruit pulp. Serve sprinkled with toasted almonds.
Choose passionfruit that feel heavy for their size. Store at room temperature for up to 10 days or even longer in the fridge.
