Roasted tomato, garlic, jalapeno and basil sauce

Enjoy making your own tomato sauce and stir it through your next pasta, lasagne or chilli con carne dish.

Ingredients

Balsamic vinegar

2 tbs

Garlic

8 clove(s), (1/2 head)

Tomato(es)

1000 g

Red onion

1 medium, cut into thick wedges

Fresh basil

1 cup(s), chopped

Fresh green chilli

3 whole, jalapeno, halved, seeded

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 170°C (conventional). Line a large baking tray with baking paper.
  2. Cut tomatoes in half lengthways and place on the prepared tray. Pour over vinegar. Wrap garlic in aluminium foil and place on the tray. Scatter onion and jalapenos around tomato. Lightly spray with oil and season. Bake for 1 hour or until tomato is soft. Set aside for 30 minutes to cool.
  3. Press garlic from skin. Using a food processor, process all ingredients for 20-30 seconds or until combined but not smooth. Pour into warm sterilised jars. Allow to cool, then cover and refrigerate for up to 2 weeks.

Notes

TIP: Try using sauce stirred through cooked pasta, in a lasagne or chilli con carne. Add a small amount to beef burgers for a spicy twist, baste on chicken breast fillets before baking or use as a sauce for meatballs.
