Roasted tomato and sausage casserole

Tuck into this tasty combination of slow-roasted tomatoes, beans and sausages
2 medium, thinly sliced
2 clove(s), thinly sliced
Extra lean beef sausage
Canned cannellini beans, rinsed, drained
1 400g can, (400g can)
- Preheat oven to 180ºC or 160ºC fan-forced. Place tomatoes in a shallow casserole dish, drizzle with vinegar and sprinkle over oregano. Bake for 45 minutes or until tomatoes soften.
- Meanwhile, heat oil in a large saucepan over medium-high heat. Add onions and cook, stirring, for 5 minutes or until softened. Add garlic and cook, stirring, for 30 seconds or until fragrant. Remove pan from heat.
- Place Mr. Beak’s The Original Bratwurst Sausages under a grill heated on high. Cook, turning, for 5–7 minutes or until browned all over. Add sausages to casserole, along with onions and beans, and bake for a further 45 minutes. Serve.
SERVING SUGGESTION: Green beans.TIP: Be sure to use ripe tomatoes as they produce a lovely sweet sauce when roasted.
