Ingredients
Pita bread
140 g, (2 x 70g)
Tomato paste
2 tbs
Red capsicum
100 g, (roasted) thinly sliced
Chargrilled eggplant, marinated in oil
100 g, not in oil, thinly sliced
Light cheddar cheese
60 g
Reduced fat feta cheese
40 g, crumbled
Instructions

Preheat grill on high. Grill pita breads on both sides until lightly toasted. Spread pita with tomato paste and top with red capsicum and chargrilled eggplant. Sprinkle with tasty cheese and feta cheese. Grill for 3–4 minutes or until cheese melts. Cut into quarters. Serve.
