Roasted fruit salad crumbles

Wake up your tastebuds with some ‘hot’ morning muesli. The brown sugar caramelises the fruit as it bakes, while the topping becomes deliciously crunchy.

Ingredients

Apple(s)

1 medium, chopped

Pear(s)

1 medium, chopped

Brown sugar

1 tbs

Reduced fat oil spread

30 g, melted

Honey

1 tbs

Natural muesli

½ cup(s), (55g)

Plain flour

2 tbs

Frozen blackberries

½ cup(s), (75g)

99% fat-free, plain or natural yoghurt, unsweetened

½ cup(s), (120g)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 200°C or 180°C fan-forced. Line a baking tray with baking paper. Lightly spray two 1-cup (250ml) capacity ovenproof dishes with oil.
  2. Place apple, pear, sugar and half the spread in a large bowl and toss to combine. Place on prepared tray and bake for 20 minutes or until lightly browned. Transfer to a large bowl.
  3. Meanwhile, combine remaining spread and honey in a medium bowl. Add muesli and flour and stir to combine. Add blackberries to apple mixture and gently toss to combine.
  4. Divide apple mixture among prepared dishes. Top with muesli mixture. Bake for 20 minutes or until golden. Serve with yoghurt.

Notes

TIP: You can use any combination of fresh and frozen fruit for this crumble. Other good combinations would be strawberry and rhubarb, nectarine and raspberries or peach and blueberries.
