These roasted garlic-scented beets are a great addition to any salad

Ingredients

Beetroot

1000 g, (1kg) trimmed, peeled

Garlic

10 clove(s), unpeeled

Fresh thyme

1 tsp, 4 sprigs

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 190°C. Place the beetroot, garlic and thyme in a roasting tray. Season with salt and freshly ground black pepper and lightly spray with oil. Toss to combine. Roast for 1 hour or until tender. Set aside for 10 minutes to cool.

Notes

SERVING SUGGESTION: Salad with rocket, orange segments and red onion.
