Roasted almond and maple plums

These roasted cinnamon, maple and vanilla flavoured plums are perfect with vanilla ice-cream and a sprinkling of toasted almonds


Ingredients
Plum(s)
9 large, (700g), firm, ripe, halved, stones removed
Ground cinnamon
½ tsp
Vanilla bean extract
1 tsp
Maple syrup
¼ cup(s), (60ml)
Flaked almonds
⅓ cup(s), (25g)
Reduced fat vanilla ice cream
2 scoop(s), small
Instructions

Preheat the oven to 200°C. Line a large baking tray with baking paper. Place the plums, cut-side up, on the prepared tray.

Combine the cinnamon, vanilla and maple syrup in a bowl. Drizzle the syrup mixture over the plums and bake for 10 minutes.

Sprinkle the plums with almonds. Bake for a further 10 minutes or until the plums are tender and the almonds are golden. Divide plums among serving bowls and top each serve with a scoop of ice-cream.
