Roasted almond and maple plums
9 large, (700g), firm, ripe, halved, stones removed
vanilla bean extract
¼ cup(s), (60ml)
⅓ cup(s), (25g)
reduced fat vanilla ice cream
- Preheat the oven to 200°C. Line a large baking tray with baking paper. Place the plums, cut-side up, on the prepared tray.
- Combine the cinnamon, vanilla and maple syrup in a bowl. Drizzle the syrup mixture over the plums and bake for 10 minutes.
- Sprinkle the plums with almonds. Bake for a further 10 minutes or until the plums are tender and the almonds are golden. Divide plums among serving bowls and top each serve with a scoop of ice-cream.
