Ingredients

wholemeal pita bread

80 g, (2x40g pockets)

reduced-fat hummus

90 g

garlic

2 clove(s), crushed

red wine vinegar

3 tsp

olive oil

3 tsp

dried chilli flakes

1 tsp

fresh flat-leaf parsley

1 cup(s), finely chopped

fresh coriander

1 cup(s), finely chopped

snowpea sprouts

50 g

red onion

½ small, thinly sliced

cherry tomato

5 individual, quartered

deli-sliced roast beef

80 g, (Buy 100g) fat trimmed

Instructions

  1. Cut pita bread in half and carefully separate pockets. Divide hummus between each pocket.
  2. Combine garlic, vinegar, oil, chilli flakes, parsley and coriander in a small bowl. Season with salt and pepper
  3. Combine pea sprouts, onion, tomatoes, roast beef and 1½ tablespoons herb mixture in a medium bowl. Season with salt and pepper. Fill pitas with beef and salad to serve.
