Risoni is a versatile pasta that resembles rice and adds a texture sensation to this filling and saucy dish.

Ingredients

Olive oil

1 tbs

Brown onion

1 medium, finely chopped

Garlic

2 clove(s), crushed

Red capsicum

1 medium, finely chopped

Canned diced tomatoes

400 g

Dry pasta

220 g, (1 cup risoni)

Canned cannellini beans, rinsed, drained

1 400g can

Fresh flat-leaf parsley

¼ cup(s), coarsely chopped

Fresh basil

¼ cup(s)

Shaved parmesan cheese

cup(s), (25g)

Instructions

  1. Heat the oil in a large saucepan over medium-high heat. Cook the onion, garlic and capsicum, stirring, for 5 minutes or until softened.
  2. Add the tomato, risoni and 2½ cups (625ml) water and bring to the boil. Reduce the heat and simmer, uncovered, for 8-10 minutes or until risoni is almost tender.
  3. Stir in the beans and parsley and cook for 2 minutes or until heated through. Top with the basil and parmesan.
