Chia seeds are full of omega-3, minerals and antioxidants. Soaking them in cooked berries make an instant jam that goes well on crusty wholegrain sourdough toast.

Ingredients

Fresh blueberries

100 g

Fresh raspberries

100 g

Granulated stevia sweetener

1 tsp

Chia seeds

2 tsp

Sourdough bread

2 slice(s), (80g) wholegrain, toasted

Low-fat ricotta cheese

cup(s), (85g)

Instructions

  1. Place blueberries, raspberries, stevia and 1 tablespoon of water in a small saucepan over medium heat. Cook, stirring, for 3–4 minutes or until berries are soft and releasing juice. Stir in chia seeds and set aside for 10 minutes or until jam thickens.
  2. Top toast with ricotta and jam. Serve.

Notes

TIP: You can use 200g chopped fresh or frozen fruit such as mango, peaches or plums instead of berries.
