Rice salad with snow peas, tuna and feta

This broccoli, tuna and feta salad is a great way to use up leftover rice!


Ingredients
Broccoli
1 cup(s), cut into florets
Flavoured canned tuna in oil, drained
170 g, (185g can)
Cooked brown rice
2½ cup(s), (425g)
Reduced fat feta cheese
60 g, crumbled
Fresh flat-leaf parsley
¼ cup(s), coarsely chopped
Lemon juice
1½ tbs
Lemon(s)
1 medium, wedges, to serve
Instructions

Steam the broccoli for 3 minutes or until tender crisp. Refresh under cold running water. Drain.

Drain the tuna, reserving the oil. Flake the tuna. Place the broccoli, tuna, rice, feta and parsley in a large bowl. Whisk together 1 tablespoon of the reserved oil and lemon juice. Add the oil mixture to the salad and toss to combine. Serve with lemon wedges
