This broccoli, tuna and feta salad is a great way to use up leftover rice!

Ingredients

broccoli

1 cup(s), cut into florets

flavoured tuna in oil, drained

170 g, (185g can)

cooked brown rice

2½ cup(s), (425g)

reduced fat feta cheese

60 g, crumbled

fresh flat-leaf parsley

¼ cup(s), coarsely chopped

lemon juice

1½ tbs

lemon(s)

1 medium, wedges, to serve

Instructions

  1. Steam the broccoli for 3 minutes or until tender crisp. Refresh under cold running water. Drain.
  2. Drain the tuna, reserving the oil. Flake the tuna. Place the broccoli, tuna, rice, feta and parsley in a large bowl. Whisk together 1 tablespoon of the reserved oil and lemon juice. Add the oil mixture to the salad and toss to combine. Serve with lemon wedges
