Rice puddings don't have to contain cream to be creamy. Arborio rice gives this hearty, stick-to-your-ribs pudding an incredibly rich and smooth texture.

Rice, white, dry
1 cup(s), (aborio)
- Combine milk, rice, sugar and cinnamon in a large heavy-based saucepan over medium heat. Bring to the boil. Cook, stirring for 30 minutes or until thick and creamy and rice is tender.
- Add raisins after 15 minutes. Remove from heat and allow to cool. Spoon into serving bowls and serve.
TIP: If the milk starts to evaporate too much during the cooking, add a little water. Cool, stirring as needed.
