Rice puddings don't have to contain cream to be creamy. Arborio rice gives this hearty, stick-to-your-ribs pudding an incredibly rich and smooth texture.

Ingredients

Skim milk

3 cup(s), (750ml)

Rice, white, dry

1 cup(s), (aborio)

Caster sugar

¼ cup(s)

Ground cinnamon

¼ tsp

Raisins

3 tbs

Instructions

  1. Combine milk, rice, sugar and cinnamon in a large heavy-based saucepan over medium heat. Bring to the boil. Cook, stirring for 30 minutes or until thick and creamy and rice is tender.
  2. Add raisins after 15 minutes. Remove from heat and allow to cool. Spoon into serving bowls and serve.

Notes

TIP: If the milk starts to evaporate too much during the cooking, add a little water. Cool, stirring as needed.
