Rebecca's smoked salmon and cream cheese mug muffin
Out of all the mug muffin recipes Rebecca has made, this is hands-down her favourite combination of flavours. The lupin flakes give it a slightly earthy, nutty flavour, while the smoked salmon, cream cheese and avocado scream indulgence.
30 g, chopped
Light cream cheese
1 wedge(s), chopped, (1 x 16g wedge)
1 tbs, chopped
2 tsp, chopped
- Place all ingredients, except avocado, in a 350 ml capacity microwave-safe mug. Season with salt and pepper and mix until well combined.
- Microwave on High (100%) for 1½–2 minutes until muffin is just firm in the centre and starts to come away from the side of the mug. Serve warm, topped with avocado.
