This super green salad has a sweet mustard honey dressing drizzled over flaked tuna, chickpeas and of course plenty of green veggies!

Ingredients

olive oil

1 tbs

red wine vinegar

1 tbs

dijon mustard

1 tsp

honey

1 tsp

rocket

60 g, baby

asparagus

1 bunch(es), cut into ribbons

zucchini

1 small, cut into ribbons

chickpeas, canned, rinsed, drained

240 g, (300g can)

green shallot(s)

1 individual, thinly sliced diagonally

tuna, canned in springwater, drained

185 g, flaked

flaked almonds

1½ tbs, toasted

fresh mint

2 tbs, leaves

Instructions

  1. Whisk oil, vinegar, mustard and honey in a large bowl. Add rocket, asparagus, zucchini, chickpeas, shallot, tuna, almonds and mint and toss to combine. Serve.

Notes

TIP: Use a vegetable peeler to cut asparagus and zucchini into thin ribbons.
