Raw green salad with tuna and mustard dressing

This super green salad has a sweet mustard honey dressing drizzled over flaked tuna, chickpeas and of course plenty of green veggies!


Ingredients
Olive oil
1 tbs
Red wine vinegar
1 tbs
Dijon mustard
1 tsp
Honey
1 tsp
Rocket
60 g, baby
Asparagus
1 bunch(es), cut into ribbons
Zucchini
1 small, cut into ribbons
Canned chickpeas, rinsed and drained
240 g, (300g can)
Green shallot(s)
1 individual, thinly sliced diagonally
Tuna, canned in springwater, drained
185 g, flaked
Flaked almonds
1½ tbs, toasted
Fresh mint
2 tbs, leaves
Instructions

Whisk oil, vinegar, mustard and honey in a large bowl. Add rocket, asparagus, zucchini, chickpeas, shallot, tuna, almonds and mint and toss to combine. Serve.
