Quinoa burger pitas

Ingredients
Zucchini
2 medium, sliced lengthways
Red capsicum
1 medium, cut into 2cm strips
Cherry tomatoes
250 g
Orange sweet potato (kumara)
200 g, cut into cubes
Quinoa
50 g, rinsed, drained
Red onion
½ medium, finely chopped, plus extra thinly sliced to serve
Garlic
1 clove(s), crushed
Balsamic vinegar
2 tsp
Wholemeal pita bread
200 g, (4 x 50g)
Rocket
70 g, baby variety
Fresh flat-leaf parsley
1 tbs, chopped, to serve
Oil spray
3 x 3 second spray(s)

Preheat oven to 200°C. Line a baking tray with baking paper. Place zucchini, capsicum and tomatoes on one prepared tray and lightly spray with oil. Bake for 25 minutes or until tender. Transfer to a plate and set aside to cool.

Meanwhile, cook sweet potato in a saucepan of boiling water for 15 minutes or until tender. Drain and mash in a bowl. Cook quinoa, following packet instructions or until tender. Drain. Add quinoa to sweet potato.

Lightly spray a medium non-stick frying pan with oil and heat over medium heat. Cook onion and garlic, stirring, for 2 minutes. Add to quinoa and sweet potato. Season with salt and pepper and mix well. Shape mixture into 4 patties. Place on baking tray and lightly spray with oil. Bake for 40-45 minutes, turning halfway through cooking time, or until golden. Let stand for 5 minutes.

Meanwhile combine reserved roasted vegetables and balsamic vinegar. Season with salt and pepper. Warm pitas in oven for 2 minutes. Fill each with a burger, roasted vegetables, rocket, sliced red onion and parsley to serve.
