Quinoa (say “keen-wah”) is a tiny seed that has a slightly nutty flavour and fluffy texture when cooked. Try it in this easy brekkie!

Ingredients

Quinoa

¼ cup(s), (45g)

Rolled oats, dry

½ cup(s), (45g)

Pepitas

1 tbs

Green apple, unpeeled

1 medium, cored, grated

Apple juice no added sugar

½ cup(s), (125ml)

99% fat-free, plain Greek yoghurt, unsweetened

½ cup(s), (120g)

Fresh blueberries

30 g

Instructions

  1. Bring ⅔ cup (160ml) water to the boil in a small saucepan over high heat. Add quinoa. Reduce heat and simmer, covered, for 8–10 minutes or until water has absorbed. Drain and cool.
  2. Place quinoa, oats, pepitas, apple, juice and yoghurt in a large bowl. Cover and set aside for 20 minutes.
  3. Serve muesli topped with blueberries.
