Quinoa bircher muesli
Quinoa (say “keen-wah”) is a tiny seed that has a slightly nutty flavour and fluffy texture when cooked. Try it in this easy brekkie!
¼ cup(s), (45g)
Rolled oats, dry
½ cup(s), (45g)
Green apple, unpeeled
1 medium, cored, grated
Apple juice no added sugar
½ cup(s), (125ml)
99% fat-free, plain Greek yoghurt, unsweetened
½ cup(s), (120g)
- Bring ⅔ cup (160ml) water to the boil in a small saucepan over high heat. Add quinoa. Reduce heat and simmer, covered, for 8–10 minutes or until water has absorbed. Drain and cool.
- Place quinoa, oats, pepitas, apple, juice and yoghurt in a large bowl. Cover and set aside for 20 minutes.
- Serve muesli topped with blueberries.
