Pumpkin and ginger parfait

no-fat, no added sugar vanilla yoghurt
1½ cup(s), (370g)
8 individual, thin, coarsely chopped
2 tbs, finely chopped
- Combine pumpkin, sugar and mixed spice in a medium bowl.
- Divide pumpkin mixture and yoghurt among 4 bowls. Sprinkle with biscuit and ginger to serve.
