Prawns with coriander cream

Ingredients
Microwave white rice
375 g
Raw peeled prawns
800 g, peeled, deveined, tails intact
Garlic
1 clove(s), crushed
Olive oil
½ tbs
Fresh coriander
¾ cup(s)
Extra light sour cream
½ cup(s)
Lime juice
1 tsp
Instructions

Combine prawns and garlic. Heat oil in a frying pan over medium-high heat. Cook half the prawns for 1-2 minutes. Transfer to a plate. Repeat with remaining prawns.

Heat jasmine rice following packet instructions. Process coriander, Sour Cream and lime juice until smooth. Season.

Serve the prawns with the rice and the coriander cream, extra coriander sprigs and lime wedges.
