Here’s a fragrant and filling curry that’s ready in less than 30 minutes and needs just five ingredients.

Ingredients

green prawns

800 g, peeled, leaving tails intact, deveined

red curry paste

2 tbs

light coconut milk

1 can(s), (400ml)

stir fry vegetables

850 g

microwave white rice

250 g

oil spray

1 x 3 second spray(s)

Instructions

  1. Heat a wok over high heat. Lightly spray with oil. Stir-fry the prawns, in 2 batches, for 3 minutes or until the prawns curl and change colour. Transfer to a bowl.
  2. Add the curry paste to the wok and cook for 1 minute or until fragrant. Stir in the coconut milk until combined. Bring to the boil. Add the vegetables and cook, stirring, for 6 minutes or until heated through. Add the prawns and stir-fry to combine.
  3. Meanwhile, cook the rice following packet instructions. Serve the curry with the rice.
