Just because you are eating alone doesn't have to mean you have to miss out on great-tasting meals. Whip up a delicious gourmet solo dinner!
Raw peeled prawns
100 g, tails intact
70 g, penne
1 small, thinly sliced
1 clove(s), crushed
1 cup(s), (250ml)
Green string beans
50 g, baby, thinly sliced
- Cook pasta in a small saucepan of boiling salted water following packet instructions. Drain and return to pan.
- Heat olive oil in a non-stick saucepan over medium heat. Add onion and cook for 3–5 minutes. Add garlic and cook, stirring, for 30 seconds. Stir in sauce and ½ cup (125ml) water. Bring to the boil, reduce heat to low and simmer for 2–3 minutes. Add prawns and beans and simmer for 2–3 minutes. Add sauce to pasta, tossing to combine. Serve.
TIP: Try using a marinara mix instead of the prawns.
