A simple yet stunning salad with a few star ingredients straight from the fridge.

Ingredients

Lebanese cucumber

1 medium, halved lengthways, thinly sliced

Watercress

200 g, sprigs picked, washed

Avocado

1 medium, halved, stone removed, sliced

Cooked king prawns

800 g, peeled, tails intact, deveined

Lemon juice

2 tbs

Olive oil

1 tbs

Dijon mustard

1 tsp

Instructions

  1. Combine cucumber and watercress in a large serving bowl. Top with avocado and prawns. Season with freshly ground black pepper.
  2. Combine juice, oil and mustard in a small jug. Serve salad drizzled with dressing.
