Pork, broccolini and plum stir-fry
medallion pork loin steak
80 g, lean, thinly sliced (Buy 100g)
½ small, cut into thin wedges
canned bamboo shoots, rinsed, drained
45 g, (½x225g can)
1 bunch(es), trimmed, chopped
50 g, trimmed, halved
40 g, trimmed (2tbs)
1 tbs, sprigs
1 x 3 second spray(s)
- Lightly spray a wok with oil and heat over high heat. Stir-fry the pork for 2 minutes or until browned. Transfer to a plate. Stir-fry the onion, bamboo shoots and broccolini for 5 minutes or until the broccolini is tender crisp.
- Return the pork to the pan with the snow peas, plum sauce and 1 tablespoon water and stir-fry for 2–3 minutes or until heated through. Serve topped with bean sprouts and coriander.
