Ingredients

olive oil

1 tbs

brown onion

1 medium, chopped

garlic

2 clove(s), crushed

veal mince

375 g

lean pork mince

375 g

carrot(s)

1 medium, grated

zucchini

1 medium, peeled, grated

pistachios

cup(s), (45g), chopped

fresh herbs

20 g, (marjoram)

wholemeal flat bread

35 g, made into breadcrumbs

egg(s)

1 medium, lightly beaten

Instructions

  1. Preheat oven to 200°C or 180°C fan-forced. Line base and sides of a 11cm x 21cm loaf tin with baking paper. Heat oil in a saucepan over medium heat. Add onion and garlic and cook, stirring, for 3 minutes or until softened. Cool.
  2. Combine mince, carrot, zucchini, pistachios, marjoram, breadcrumbs, egg and onion mixture in a medium bowl. Season with salt and freshly ground black pepper. Press mixture into prepared tin and smooth surface. Bake for 40 minutes or until cooked through. Stand for 5 minutes. Drain excess fat before thickly slicing and serving.

Notes

SERVING SUGGESTION: Steamed green beans and mashed potato made with 400g potatoes and 2 tablespoons skim milk. You can also serve with hot tomato chutney.
