4 large, pitted, cut into thin wedges

- Preheat oven to 200°C or 180°C fan-forced. Line a baking tray with baking paper. Lightly spray each sheet of pastry with oil. Fold each sheet in half four times to form 7cm x 12cm rectangles.
- Spread jam over pastry, leaving a 1cm border. Arrange plums over jam then sprinkle with almonds.
- Place pastry squares on tray and lightly spray with oil. Bake for 10-12 mins or until golden. Serve tarts warm or at room temperature.
