Ingredients

sesame oil

2 tsp

skinless turkey breast

500 g, cut into strips

plum sauce

¼ cup(s), (60ml)

sambal oelek

1 tsp, Indonesian chilli paste

cos lettuce

1 cup(s), (8 baby leaves)

carrot(s)

2 medium, spiralised

lebanese cucumber

2 medium, spiralised

Instructions

  1. Heat a wok over medium-high heat. Add oil and swirl to coat.
  2. Stir-fry turkey for 2-3 minutes or until lightly browned.
  3. Add plum sauce and sambal oelek and stir-fry for 1-2 minutes or until turkey is cooked through.
  4. Place lettuce leaves on serving plates. Top with combined carrot and cucumber zoodles.
  5. Divide turkey mixture among lettuce leaves.

Notes

SERVING SUGGESTION: Bean sprouts and finely chopped unsalted roasted peanuts.
