This frozen dessert is full of fresh fruity flavour.

Ingredients

Canned pineapple in natural juice

425 g

Sweetened skim condensed milk

400 ml, (400g can)

Natural essence

1 tsp, (coconut)

Lime juice

1 tbs

Wafer cone

6 individual

Instructions

  1. Strain the pineapple and reserve the juice. Finely chop 150g of the pineapple.
  2. Combine the reserved juice, chopped pineapple, condensed milk, coconut essence and lime juice in a medium bowl. Pour mixture into an 800ml-capacity metal container. Cover and freeze overnight or until firm. Serve in ice-cream cones.

Notes

SERVING SUGGESTION: Toasted coconut flakes.TIP: When set, this ice-cream is soft and creamy, similar to soft-serve ice-cream. If you have a large piping nozzle, use it to swirl the ice-cream into the cone. You can add the leftover pineapple to your breakfast cereal or use it in your favourite fruit smoothie.
