Known as ‘paprikas’ in the native Hungary, this traditional strew featuring strips of colourful capsicum is real comfort food.

Ingredients

Ground paprika

1 tbs

Plain flour

2 tbs

Skinless chicken drumstick

8 individual

Olive oil

1 tbs

Brown onion

1 large, thinly sliced

Red capsicum

1 medium, thinly sliced

Green capsicum

1 medium, thinly sliced

Garlic

2 clove(s), crushed

Canned diced tomatoes

400 g

Light cream

2 tbs

Instructions

  1. Combine paprika and flour in a large bowl. Season with salt and pepper. Add chicken and toss to coat.
  2. Heat oil in a deep non-stick frying pan over medium heat. Add chicken and cook, turning, in batches, for 5 minutes or until browned. Transfer to a plate.
  3. Add onion and capsicums to pan and cook, stirring, for 5 minutes or until softened. Add garlic and cook for 1 minute or until fragrant. Add tomatoes, 1 cup (250ml) water and chicken to pan and bring to the boil. Reduce heat and simmer, partially covered, for 30 minutes or until chicken is cooked through. Stir through cream. Serve.

Notes

SERVING SUGGESTION: Steamed green beans, plus crusty ciabatta bread.Suitable to freeze (without cream) for up to 2 months.
