Pan-fried mushrooms on wholegrain toast
80 g, (2x60g slices) toasted
marinated feta cheese
1 tbs, chopped
- Heat oil in a large non-stick frying pan over high heat. Cook mushrooms, in batches, for 2–3 minutes each side or until golden. Season with salt and freshly ground black pepper.
- Meanwhile, grill or toast bread on both sides until lightly browned. Serve toast topped with mushrooms, feta and chives.
