Give your tastebuds a delicious wake-up call with this tasty combination of marinated feta and earthy mushrooms on toast. Chopped chives add a herby hit

Ingredients

Olive oil

2 tsp

Mushrooms

6 whole

Wholegrain bread

80 g, (2x60g slices) toasted

Marinated feta cheese

60 g

Fresh chives

1 tbs, chopped

Instructions

  1. Heat oil in a large non-stick frying pan over high heat. Cook mushrooms, in batches, for 2–3 minutes each side or until golden. Season with salt and freshly ground black pepper.
  2. Meanwhile, grill or toast bread on both sides until lightly browned. Serve toast topped with mushrooms, feta and chives.

Notes

TIP: To prepare mushrooms, simply wipe the tops with damp paper towel and trim the stalks.
