Pan-fried apricot and goat’s cheese sandwich
PersonalPoints™ per serving
This toastie is the perfect combination of sweet, creamy and tangy flavours, with the added benefits of calcium and protein found in goat’s cheese.
Fresh lemon rind
4 slice(s), (4 x 35g slices)
2 individual, thinly sliced
Reduced fat oil spread
- Combine cheese, honey and rind in a small bowl. Spread 2 slices bread with cheese mixture. Top with apricot and sandwich with remaining bread.
- Heat a medium non-stick frying pan over medium-high heat. Spread both sides of each sandwich with spread. Cook sandwiches for 1–2 minutes each side or until bread is golden and toasted. Cut in half or into fingers to serve.
TIPS: You can use reduced-fat fresh ricotta cheese instead of goat’s cheese. You could also cook these sandwiches in a preheated sandwich press or a jaffle maker. Experiment with a variety of fresh fruit fillings, such as mango, plums, pears, apples or nectarines.
