Perfect for a relaxed weekend breakfast, this speedy omelette for two is alive with the fresh flavours of mint, peas and a hint of lemon to tantalise your tastebuds.

Ingredients

Egg(s)

4 medium

Flavoured rock salt

½ tsp, garlic flavoured

Fresh mint

2 tbs, leaves, chopped, plus extra leaves to serve

Fresh lemon rind

1 tsp, finely grated, plus extra strips to serve

Frozen green peas

¼ cup(s), (30g)

97% fat-free cottage cheese

¼ cup(s), (60g)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Whisk eggs and 2 tablespoons water in a medium bowl. Add garlic salt, mint and lemon zest, and whisk to combine.
  2. Lightly spray a medium non-stick frying pan with oil and heat over medium–low heat. Pour in egg mixture, swirling to cover base of pan. Sprinkle with peas, then dollop teaspoonfuls of cottage cheese evenly over top. Cover and cook for 7–8 minutes, until egg is set.
  3. To serve, season with salt and pepper, and sprinkle with extra mint and lemon zest strips.
