Soba noodles are made from buckwheat and are nutrient dense, making them an excellent ingredient in this convenient and tasty soup.

Ingredients

Dry soba noodles (100% buckwheat)

40 g

Sesame oil

1 tsp

Miso paste

1 tbs

Soy sauce

2 tsp

Chilli paste

2 tsp

Cooked skinless chicken breast

100 g, shredded

Red capsicum

¼ medium, thinly sliced

Red cabbage

½ cup(s), finely shredded

Bok choy

½ baby, thinly sliced

Green shallot(s)

1 individual, thinly sliced

Fresh coriander

2 tbs, coarsely chopped

Bean sprouts

¼ cup(s), (20g)

Instructions

  1. Cook noodles in a medium saucepan of boiling water following packet instructions or until just tender. Drain. Rinse under cold water. Drain. Place noodles in a 1 litre (4-cup) jar with oil and toss to coat.
  2. Add miso paste, soy sauce and chilli paste. Top with chicken, capsicum, cabbage, bok choy, shallot and coriander. Seal jar and chill until required.
  3. When ready to serve, add 1½ cups (375ml) boiling water and set aside for 2 minutes. Mix with a fork and serve topped with sprouts.

Notes

TIPS: If transporting the soup, place sprouts in a snap-lock bag until serving. You can use 100g shelf-fresh soba noodles prepared following packet instructions instead of dried soba.
