No bake oaty bites
These peanut butter and oat energy bliss balls make a great healthy snack on the go.
Dry rolled oats
Shredded or desiccated coconut
25 g, finely chopped
45 g, roasted, chopped
Smooth or crunchy peanut butter
60 g, smooth variety
Vanilla bean extract
- Combine oats, coconut, cranberries and hazelnuts in a large bowl.
- Add peanut butter, honey and vanilla and stir until well combined (the mixture should be quite sticky).
- Chill for 30 minutes, then roll mixture into 12 balls. Place on a plate and chill in fridge until ready to serve.
TIP: Store in an airtight container in the fridge for up to 1 week. VARIATION: Add 1 tsp ground cinnamon with oats in Step 1 or swap hazelnuts for unsalted roasted almonds.
