Creamy and rich, this luxurious looking dish is surprisingly quick and easy to make. This veggie version is packed with flavour, with a little chilli powder giving it a hint of heat.


Ingredients
Onion
1 medium, finely chopped
Ground paprika
1½ tsp
Chilli powder
¼ tsp
Garlic
2 clove(s), crushed
Mushrooms
600 g, button variety, sliced
Light sour cream
⅓ cup(s), (80g)
99% fat-free, plain or natural yoghurt, unsweetened
¼ cup(s), (60g)
Fresh flat-leaf parsley
2 tbs, finely chopped, plus extra leaves to serve
Oil spray
1 x 3 second spray(s)
Instructions

Lightly spray a large frying pan with oil and cook onion over medium heat, stirring, for 6-8 minutes, or until softened. Stir in paprika, chilli and garlic and cook for 1 minute. Add mushrooms and cook, stirring, for 7-8 minutes, or until tender.

Stir in sour cream and yoghurt until combined, then stir in chopped parsley and season with salt and pepper to taste.

Serve sprinkled with extra parsley leaves.
